Red Onion Marmalade

Sweet red onion marmalade which is great with pate, duck, a good pork pie, cheese, cheese on toast & sausages and on and on the list goes.

I've kept this recipe with me since my first full time job as a young commis chef at Hunstrete House Hotel near Bath where I worked from 1985-1987. I've sliced an awful lot of onions since then.

Ingredients. Red Onions (57%), Red Wine, Fair Trade Brown Sugar, Garlic, Rosemary, Salt.
